Today on the menu is a creamy avocado dressing, chicken breast, spring mix of baby lettuces, Greens, and Radicchio.
1 small red onion
A small box of spring mix, or 2 to 3 handful.
1 Roma tomato
1 boneless chicken breasts
1/4 fl.oz. seasoned rice vinegar
Salt and pepper
First, slice your onion into thin strips and cut tomato into 1/2 dice.
Pat chicken breast dry and season both side with salt, black pepper, and cayenne pepper.
Add 1 tsp of olive oil in a medium non- stick pan and cooked until golden brown 2 to 3 minutes on both side. Then, transfer chicken to a bowl and cover with plastic wrap. Cool at least 5 minutes. In the meantime, caramelize onions
Return pan ued to sear chicken to medium heat, and add 1 tsp of olive oil. Cook stirring occasionally until browned 10 to 12 minutes. If pan becomes too dry, add water 1 Tbsp at a time. Then set aside.
Cut your chicken breast into bite-sized pieces once it’s cooled.
Into a bowl, mash avocado until smooth. Mix in rice vinegar, 2 Tsp of water and salt and pepper to taste. Feel free to add more water, 1 Tbsp at a time until your desired texture.
Place mix spring, chicken, caramelized onions, tomatoes, in bowl with dressing and toss. Enjoy!!!
